CERTAINLY ONE OF the great staple dishes: roast chicken. Giovanna had two of them ready, whole birds salted and onioned and ready to go in their enameled cast-iron casseroles, and she served them with roasted potatoes and garlic and carrots, and followed them with a green salad, and then, since it was Giovanna, some cake. What a pleasure.Red wine; didn't notice. Sorry. Long day.
