We here on Eastside Road regard it as a delicacy. I usually cook them Venice-style, sweet-sour, with raisins and sliced onions and a little vinegar. Lindsey sauteed them simply tonight, in a little olive oil, and served them with tomatoes and green beans, and they were, well, delicate, which I suppose is what a delicacy should be.
